Sweet potato (Ipomoea batatas) is one of the most important food crops in the world. Sweet potato is rich with carotenoids and pro-vitamin A. Carotenoids compounds are commonly found in fruits and vegetables and are responsible for yellow, orange, and red pigmentations.
