Abstract

Gellan gum is a versatile microbial polysaccharide distinguished by its tunable physicochemical properties, enabling its transformation from a traditional food hydrocolloid into an advanced functional biomaterial. In this review, a comprehensive bibliometric analysis of 2641 publications indexed in the Web of Science from 2004 to 2024, focusing on gellan gum developments and expanding biomedical relevance, has been conducted. The results reveal continuous and accelerating growth in research output, with Polymer Science, Applied Chemistry, and Food Science Technology identified as leading disciplinary drivers. Keyword network visualizations show shifting interest toward ion-responsive hydrogels, 3D biofabrication, antimicrobial applications, and particularly the emerging potential of gellan gum for probiotic encapsulation and delivery. Mechanistic insights highlight how structural differences between high- and low-acyl gellan gum govern gelation behavior, mechanical performance, and barrier functionality — advancing its suitability for site-specific gastrointestinal release. By mapping influential contributors, citation hotspots, and publication trajectories, this analysis establishes gellan gum as a promising biopolymer with emerging biomedical applications for potential microbiome targeted therapies and functional nutrition, while identifying knowledge gaps and strategic opportunities to accelerate translation from laboratory innovation to industrial application.
