Abstract

Gastronomi ialah pengkajian berkaitan dengan makanan dan amalan pemakanan yang baik (good eating). Makanan bukan sahaja penting untuk hidup, tetapi turut mempunyai pengaruh dalam menyampaikan mesej melalui komunikasi. Dalam konteks budaya Melayu, elemen yang terdapat dalam gastronomi mempunyai pengaruh secara tidak langsung dalam komunikasi, khususnya komunikasi secara tersirat. Hal ini jelas dapat dilihat dalam peribahasa Melayu. Tumpuan analisis ini adalah peribahasa yang menunjukkan pengaruh makanan yang berunsur sejuk dan panas. Contohnya, pisang mewakili makanan berunsur sejuk, dan daging yang mewakili makanan berunsur panas. Data peribahasa Melayu dikumpulkan daripada pangkalan data (www.malaycivilization.com) UKM dan ‘Kamus Istimewa Peribahasa Melayu’. Kajian ini menerapkan pendekatan rangka rujuk silang (RRS) dan semantik inkuisitif dalam penganalisisan data. Data yang diperoleh diperkukuh dengan hasil janaan data korpus yang menunjukkan persamaan antara konsep dan ciri-ciri yang dibawa oleh makanan yang berunsur sejuk-panas dengan emosi penuturnya. Hasil kajian mendapati peribahasa berkaitan makanan berunsur sejuk menunjukkan ciri-ciri ‘sejuk’ melalui emosi gembira, bahagia dan senang hati. Manakala makanan berunsur panas pula didapati memaparkan ciri-ciri ‘panas’ yang ditunjukkan melalui sifat negatif, seperti ‘zalim’, ‘berpura-pura’ dan ‘kesakitan’ yang menjadi makna implisitnya. Secara tidak langsung, konsep dan ciri-ciri yang terdapat dalam makanan telah diserap dan diadaptasi dalam bentuk komunikasi implisit. Gabungan data, teori, falsafah dan budaya telah dapat menghasilkan huraian makna dalam peribahasa Melayu, yang akhirnya mencerminkan akal budi penuturnya, khususnya berkaitan gastronomi Melayu. ************************************************************************************************************ Gastronomy is a study about food and good eating habits. Food is not only essential to life, but it also plays a significant role in delivering a message through communication. In the context of Malay culture, the elements embodied in gastronomy have an indirect influence on communication, particularly implicit communication. This is evidently observable in Malay proverbs. This study focuses on Malay proverbs representing food that has the attributes of ‘hot and cold’ elements. For example, a banana is categorized as food with cold element, meanwhile meat is considered as food with hot element. Data on Malay proverbs are collected from UKM database (www.malaycivilization.com) and ‘Kamus Istimewa Peribahasa Melayu’. The analysis is couched in bridging cross-reference and inquisitive semantic approaches. The given data are further supported with corpus data demonstrating the similarity between the concepts and characteristics of food with cold-hot elements and the speakers’ emotions. The findings showed that Malay proverbs containing food with cold elements demonstrated 'cool' characteristics through joyful, blissful and delightful emotions. While food with hot elements demonstrate 'hot' characteristics through negative emotions such as 'tyranny', 'pretence' and 'pain' which denote its implicit meaning. It is apparent that the concepts and features represented in food have been absorbed and adapted in the form of implicit communication. The combination of data, theory, philosophy and culture has successfully captured the description of the meanings of Malay proverbs, which ultimately reflects the mind of the speakers, especially in relation to Malay gastronomy.
