Abstract
This study introduces a smart precision heating system designed to enhance the dehydration process of stingless bee honey (SBH), aligning with green engineering and sustainable manufacturing practices. Unlike honeybee honey (HBH), which typically contains around 18 - 20% moisture, SBH has a significantly higher moisture content of approximately 25 - 35%, making it unsuitable for conventional drying methods that involve high temperature over prolonged periods, causing thermal degradation of nutrients and excessive energy use. To address these challenges, a smart dehydrator of 2 kilograms capacity was developed featuring precision control and integrated sensor arrays for real-time temperature monitoring. The system ensures uniform heat distribution and maintains dehydration within a safe temperature below 40°C adhering to Malaysia Standard (MS) 2683:2017, for SBH’s quality control. Trials conducted on SBH samples demonstrated the dehydrator’s capability in green precision heating enabling local stingless beekeepers to process their harvested SBH for commercial distribution. The heated SBH has an extended shelf life and remains stable at room temperature, preventing spoilage from fermentation. The energy cost of two hours operation at constant temperature 38.5°C is RM 0.114 per kilogram of SBH. This dehydrator offers a practical, scalable and sustainable solution for small and medium-scale producers, bridging the post-harvest technology gap while integrating food quality assurance with green engineering.
