Assoc. Prof. Ts. Dr. Ibrahim bin Abu Bakar has started his career as Assistant Researcher at UKM and PORIM in 1995. Before joining IIUM in 2005, he had served Ministry of Health Malaysia as Food Technologist for ten years. Presently, Dr Ibrahim is an Associate Professor at Department of Nutrition Sciences, Kulliyyah of Allied Health Sciences, IIUM Kuantan campus. Beside teaching, Dr. Ibrahim actively involves in research and innovation works especially in developing new halal ingredients and food. He invented novel alternative plant fiber based halal meat/chicken burger by substituting animal fat with vegetable fiber from young jackfruit. He won gold medal at ITEX 2013 on his invention.
